The Why:
Its sister whiskey, Rubicon Rye has become the Dry Diggings flagship and developed a following of its own. Rather than batching hundreds or even dozens of barrels to achieve a consistent flavor profile from release to release, year to year, we have embraced the singularity of each barrel. Sometimes we blend in small batches of two or three barrels, but most are bottled on their own. And yet all get the same Rubicon label. The age-old marketing model of predictability meant to satisfy consumer expectation is let go in favor of the unpredictable idiosyncrasies inherent to the aging process. As a craft operation, we have fun playing around with aging and what’s possible.

Rubicon Rye has convinced bourbon drinkers to get outside their comfort zone and try something new, it’s taught others to drink whiskey neat, and it may sound a bit romantic, but it's a whiskey that commands attention and demands to be savored. Part of appreciating a good bottle of whiskey is to slow down with the world and get lost in that glass. To appreciate a moment of quiet and be transported away from the chaos of everyday life.
So, for years, we had folks asking us when we would make a Rubicon Bourbon. But, we didn’t have an idea of mash bill, aging, or style, and we also didn’t want it to compete with 31n50 or the Engine 49 Bourbons. We wanted the release of a Rubicon Bourbon to be our opportunity to have fun and play with the craft of producing whiskey.
This first bottling of Summer 2023 is a small run of blended 8-11 year whiskey and only 16 cases will be released. Why such a small run? This blend of heavily aged bourbon will be the base for future releases as we play with finishing barrels. Some releases will be finished in Rubicon Rye Radoux Barrels, others may be finished in AppleJack or Amador Port barrels. Perhaps we’ll also try the secondary barrels at different aging points, such as 3 months, but sat in the summer heat, or 9 months over the course of fall/winter.
What you can count on, is every batch will be different.
All bottles will be sold directly through the Tasting Room and website, rather than traditional distribution. We want to meet every person who is interested in it, teach you how to taste it, pour you a sample, and discuss the details face to face. It’s that personal connection that makes us feel like we’re building a community of educated spirit enthusiasts, rather than just peddling bottles like any other.
This may not be everyone’s cup of tea, but for those who want to be inspired and drink something new, we invite you to come along with us for the ride.
